A brief history of Oats and Milling
This is not your grandma’s porridge.
Much like so many other great traditional foods, oats were originally thought to be nothing more than a pesky weed in the wheat and barley fields.
Rolled oats are made from the traditional oat groat. They are produced using a very old-fashioned method by first being dehusked, steamed, rolled into flat flakes under heavy rollers and then finally, being toasted to keep them in a more stable state. At this point, the oats can be eaten as they are fully digestible and no further cooking is necessary.
Oat groats have the ability to go rancid due to their healthy fat content of 20% saturated, 37% monounsaturated and 43% polyunsaturated fat which is why they need to be processed soon after harvesting.
While it is not clear when and where the first “cultivated” oat comes from, historians and authorities agree that oats took root in Northern Europe, specifically Scotland.
It was in the 18th century that oat mills popped up throughout Scotland but it was in the late 1800’s that oat milling took a big leap with the invention if the groat-cutting machine. The invention of this device aided in the formation of what is known today as “steel cut oats”.
During the early 19th century oats were exclusively sold in pharmacies and almost all oatmeal available in the United States was imported from Scotland. Because of Scotland’s short and wet growing season, it provides the perfect growing environment for oats. Today, the majority of commercially grown oats are used for horse and cattle feed and less than 10% are grown for human consumption.
Steel cut oats, quick oats or instant?
If you go into the cereal section of your local market, you will find a variety of oats in different forms. Rest assured, they all come from the original oat groat, but which one you buy depends on how you plan to use them and how patient you are with prepping time.
The traditional old fashioned oat, otherwise known as the rolled oat, is what most people buy for their cereal morning cereal. These are the steamed, rolled oat groats which are large and flat flakes. They usually take about 10 minutes to make into a hot cereal. It is this form of oats that these two popular form of oats come from (which are simply a different version of the same thing):
- Quick cooking oats are simply old-fashioned rolled oats but cut into smaller pieces. To make this into a hot cereal takes about half the amount of time. Both the old-fashioned and the quick oats are wonderful to bake with and can be used interchangeably.
- The instant oat, while the exact same type of oat as the others, only takes about 1-minute to prepare. This preparation process is more of a reconstitution rather than a cooking process. Instant oats are cut into very tiny pieces, precooked and then dried. This is not the form you want to use in baking as it will leave a gummy texture.
Finally, is the steel cut oat, otherwise known as the Irish oat. Steel cut oats are for the true old-fashioned oat eater who knows that good things come to those who wait. This is simply the original groat cut into small pieces. These can take up to 30 minutes to cook and they need to be soaked overnight to help the cooking process. It is this form that the true tradition of oatmeal comes from.
A true tradition of oats which has made a big comeback is taking the old-fashioned rolled oats and making it into oat flour as a substitute for other grain flours which lack nourishment and easy digestibility. There are several reasons for this.
- Oats are one of the few whole grain foods which come out of the package as 100% whole grain.
- Oats are a nourishing source of soluble fiber
- Because they are such a great source of soluble fiber, they are considered a low glycemic food. The high fiber content slows down the uptake of sugar into the cells.
Beta Glucans: The superstar of Oats
While oats are a nutritionally dense food packed with nutrients like calcium, zinc, b vitamins and vitamin e, one of the more unique compounds found in this food are beta glucans.
Beta glucans are the “healthy sugars” found in the cell wall of a variety of different foods (most well known as a powerful constituent found in medicinal mushrooms) including fungus, yeast, oats, and barley. Beta-glucan fiber, depending on which food it is found in, can be either soluble or insoluble.
The beta-glucan found in oats is considered soluble which makes oats a slow digesting food. This not only leaves you feeling more satisfied but, due to its ability in slowing the uptake of sugar into the cells, there are no sugar spikes.
Furthermore, slowing down the digestive process allows for the fiber to work its magic in keeping your bowels clean and your lipid (LDL) levels in check. Finally, beta glucans are well known for nourishing a healthy immune system response due to their ability to work as immune modulators.
